Oils are nature given unsaturated vegetable fat,Ghee is saturated animal fat and Dalda is artificially saturated hydrogenated vegetable oils.When compared with oil and ghee dalda is harmful to health especially to heart.Therefore it is advisable to avoid dalda in food regularly at the same time once in a while if dalda is used no problem.
Combination of two oil is good to health.Olive oil is good to health but it's price is high.shallow frying is good rather than deep frying.Re use of deep fried oil's is unhealthy.On a single day one oil can be used for sambar and the other for porriyal.
